My deep longing for cooler days has had some positive results here on the blog lately. It has inspired me to come up with several frozen and unbaked desserts like my Peanut Butter Cookie Ice Cream, my Low Fat Mango Freeze and now these amazing Nutty Cheesecake Parfaits.

I guess if these recipes are my consolation prize for another month or so of hot and humid days I can learn to live with it for a bit longer.  Although I will say with some recent rain, the temps have been in the mid 80’s instead of 98 to 100 degrees. A Little Goes A Long Way!

These Nutty Cheesecake Parfaits are the rich, decadent and a little goes a long way with these little cups of goodness. I love small individual desserts that help keep us mindful of portion control. Since these beauties are heavy on the more calorie dense dairy items like cream cheese and heavy whipping cream they are best served in smaller dessert cups such as the ones I use here in these pictures.

A few years back we used to frequent our favorite Chili’s restaurant and on their menu offered these mini desserts served in shot glasses. I believe they called them Sweet Shots or something like that. Anyone else remembers those?

Man, they were cute and super tempting. They were served in smaller cups to make you feel less guilty when you indulged in that sugar filled treat. Which was smart marketing if you think about it! I know that often seen empty glasses sitting on tables while we ate, so they seemed to be a hit.

I think they were not only smart but they were also just darn cute. Who doesn’t enjoy having their own individual dessert that you don’t have to share?  You can find some of those little cups that they served their Sweet Shots in below.

Believe me the old saying “a little dab with do ya” is the perfect way to describe these Nutty Cheesecake Parfaits. They are extremely rich and you will be completely satisfied with the smaller size.

Possible Recipe Variations:

*Add some peanut butter powder to your vanilla mixture for a

*Add a few chocolate chips to your nut layer for that extra chocolate kick!

*Add a fruit topping like strawberries to break up the richness of the cheesecake

Ingredients

    Vanilla Layer
  • 8 oz softened cream cheese
  • 1/3 cup of almond milk
  • 1/4 cup of Pyure Sweetener
  • 1 tsp of pure vanilla
  • Chocolate Layer
  • 8 oz of softened cream cheese
  • 1/2 cup of almond milk
  • 1/3 cup of Pyure Sweetener
  • 3 Tbsp of unsweetened cocoa powder
  • 1/2 tsp of vanilla
  • Toppings
  • 1 cup of heavy whipping cream
  • 1/4 cup of Pyure Sweetener
  • 1 Tbsp of Knox Gelatin
  • 1 tsp of pure vanilla
  • 1/2 cup nuts of choice

Instructions

  1. In a medium bowl add in all the ingredients for the Vanilla Layer. Use a mixer to combine the mixture until it is smooth. Taste and add more sweeter if you like things sweeter. Sit the mixture aside.
  2. In a separate bowl repeat these steps for the Chocolate Layer and sit it aside.
  3. In a third bowl add in your add your heavy whipping cream, sweetener, gelatin and the vanilla. Mix the cream until it has formed a nice fluffy consistency.
  4. To assemble these cute little desserts you will need 5 small dessert bowls or cups.
  5. Begin by adding two heaping tablespoons of the vanilla cheesecake mixture to the bottom of each serving glass/bowl.
  6. Next add two heaping tablespoons of the chocolate cheesecake mixture to each of the desserts.
  7. Next add a sprinkle of nuts over the top of each chocolate layer. Divide all the nuts between all your desserts
  8. To finish the little desserts off use a piping bag or spoon to top each of them off with some of the whipped cream.
  9. Serve right away or place in the fridge to chill for a couple of hours. If you are going to make these desserts a head and store them for more than a couple of hours I suggest leaving the whipped cream off of them and covering each of them with plastic wrap. Then right before serving whip your cream and top each dessert.
  10. Note: For an optional garnish you could sprinkle on a few more nuts and finely grated 85 % chocolate over each dessert.
